Got Garlic?
We are working on getting better about eating out...we are broke, these days, so cooking and eating in has really helped us save some pennies. The thing about cooking all the time is that...well, I have a repertoire of trusty recipes that take a little more than 2 weeks to go through. I mix it up a bit, so (hopefully) it doesn't get too boring for us.

But try as I might, mealtime still gets boring sometimes.

So I mix it up every now-and-again, by trying a new recipe. I'm always afraid to try new recipes, because I never know exactly how they'll turn out...but fortunately, I have a husband and a son with very forgiving tastebuds. So, trying new recipes is not as intimidating as it could be.

As I have time, I'm going to start sharing recipes with you. Some of them might be new recipes (for me) and others might be those tried-and-true things that I think you shouldn't live without. But pretty much all of them are going to be easy and time-efficient (because, if they weren't, I wouldn't be making them).

Tonight, I'm sharing a new recipe. It was given to me by a lady who goes to church with us - and is VERY garlicky. But garlic....YUM. It's a salad, and I wasn't quite sure if Iliya would eat a salad, so I ran by the deli and grabbed some fried chicken as a backup for him and Nathan (I don't do fried chicken, but Iliya will practically inhale it, so it's a good backup plan). If you like garlic, you really should try this salad!
  • 2-5 garlic cloves (I used 5, and for the amount of salad we had, it was almost TOO much. almost.)
  • 1/8 c. freshly squeezed lemon juice (about 2 lemons)
  • 1/8 c. vinegar (tonight I used balsamic)
  • 1/4 c. olive oil (in an attempt to make this a little healthier, I didn't use quite as much oil - it made for a pretty acidic salad, but I was ok with that)
  • lettuce (tonight, I used a bag of the pre-cut salad)
  • 2 roma tomatoes (I used about 10 grape tomatoes)
  • whatever salad veggies you want to use - cauliflower, carrots, cucumbers, etc.
The lady that gave this to me said that the key(s) to making this salad good are to #1, make sure to use a garlic press and #2, use a wooden bowl to mix the salad. Who am I to question the perfect technique?

Press the garlic into the wooden bowl and spread (smear) around. Cut the tomatoes and stir them around in the garlic. Let rest for a minute, while you cut your other veggies and mix up the dressing (lemon juice, vinegar, and olive oil). Add the lettuce to the tomatoes & garlic. Add other veggies and pour dressing on top. Toss really well.

It's a very pretty salad, but I didn't get a "before" picture. I think, though, this picture illustrates just how well it was received at our dinner table:


And Iliya? Dinner salad plus 2 chicken drumsticks makes for a very full little boy!

Sounds good. In an effort to cut costs we are eating in a little more too. But I missed pizza. If you have publix around you can usually find pizza dough in their deli section. We make homemade pizzas about once a week. (Usually with the whole grain dough) Its lots of fun and much cheaper than take out. And I think the regular (non-whole grain) dough is even on sale this week.

This is a super easy pizza dough recipe that you can make with ingedients you have in the pantry. This was Sissy's recipe from long ago.

Homemade Pizza
For 3 round pan pizzas – or - 1 round & 1 rectangular cookie sheet:
2 pkgs. yeast
2 c. warm water
2 t. salt
2 t. sugar
4 T. oil
4 ½ cups plain flour
o Dissolve yeast in water
o Add salt, sugar & oil
o Mix well
o Add flour 1 c. at a time
o Spray pizza pans with vegetable spray & sprinkle with a little cornmeal.
o Divide dough equally & pat out on pan ((it is a wet dough, so add enough flour -- maybe 1/4 cup -- to pat out to not stick to your hands)
o Bake 2 min. @ 400
o Remove from oven & spread tomato sauce mixed with spices or “jarred” pizza sauce, choice of meats (sausage, pepperoni, etc.) & vegetables (bell pepper & pineapple – yummy!)
o Sprinkle with shredded mozzarella cheese & any other cheeses of choice
o Bake for 10 minutes & then rotate pizzas from top to bottom racks & vice versa. Check crust for doneness.

Serve with Pringles as a side dish :o) or kernel corn like in grade school :o)

We are also eating at home more -- we made a commitment last week to only eat out when traveling and this has only been a week and I think I feel better and our weight can tell it too! And I know our budget does! Over 30 years ago (pre-children days :o), I made a list of everything we liked and placed it in a favorite cookbook. I got the list out recently & we made a monthly menu with that list, along with other favorites added since then and it surprised me how varied our menu was for the month. I'll share that with you soon. One thing that helps when making new recipes is to cut them in half or fourths & give it a try before making a whole recipe & finding out you don't like it & waste the money & time on it. Then if you like it, add it to your list. I made the mistake with trying an oven-fried chicken recipe recently with when hosting a large group of people. I should have tried it first so I knew how to alter it to make it better. Live & learn :o)
